The Chef
GERÔNIMO ATHUEL
A lifelong fisherman, diver, and chef, Gerônimo is deeply dedicated to researching conservation and aging techniques for fish and seafood, creating dishes and products that go beyond the ordinary. In addition to prioritizing conscious, selective, and artisanal fishing—often done by himself—the chef highlights lesser-known fish rarely found elsewhere, made possible through his specialized techniques.
Gerônimo also does educational work with local fishermen, teaching methods such as ikejime, a Japanese killing technique that preserves the quality of the fish while minimizing suffering through a precise and rapid cut that induces brain death.
